Tequila Lime Chicken Recipe

This is a great summer recipe.  Marinate the chicken the day before and you will be ready to go come barbecue time.  The one thing I do recommend is using chicken breasts with the skin-on.  The skin helps to keep the moisture in while cooking and is easily remove after, if you prefer.  I have found that they don’t often sell boneless, skin-on breasts any more.  In that case, you have two choices, buy the bone-in, skin-on breast and ask the butcher to remove the bones for you or remove the bones yourself.  That’s usually what I have ended up doing and it’s not that difficult.   Either way it is worth the extra effort.  Margaritas and guacamole are worth the extra effort here too!
