Tequila Thyme

Oh my!  The best tequila drink ever!!  Boom!!!

In a large pitcher combine…

16 oz. blue agave blanco tequila

4 cps. freshly squeezed lemon juice

1 1/2 cps. lemon thyme syrup (recipe to follow)

Stir to mix.  Divide between 8 glasses filled ice.  Top with soda water.  Garnish with fresh time sprig and lemon slice

Lemon Thyme Syrup

In a small pot combine 2 cups of sugar with 2 cups of water.  Add the zest of two lemons and 12 thyme sprigs.  Bring to a boil over high heat, stirring occasionally until sugar is dissolved, about 5 minutes.  Remove from heat and cool to room temperature.  Strain the mixture into measuring cup, discard thyme sprigs and zest.  Cover with plastic wrap and chill in refrigerator until needed.

Lemon Thyme Syrup can be made ahead and lemons can be juiced ahead.  Store separately and combine all ingredients at serving time.


Queso Fundido

Counting the days until all of you get here for Noelle & Steve’s engagement party!  I know queso is one of your favorite orders at Mexican restaurants so I hope that you like this one.  It’s Corbination for the weekend!  Ole!!

Get your spicy on!  This pasta dish will light you up!  Costco has a very convenient, frozen seafood mix that works great for this recipe.  It doesn’t have the little neck clams but it does have scallops instead.  It works for me!  Also, if you are cutting back on the carbs, try spaghetti squash instead of linguine.  I made linguine for Dad and squash for me.  Loved it!  Also, for the Emeril’s Essence, I have had Tony’s or Zaterain’s Creole seasoning on hand and they do the job!  Bon Appetit!

Rhubarb Shortcakes

Who likes rhubarb?  I do!  I do!  This recipe was easy to make with a do-ahead option which I love.  I made it last week for friends and all I had to do that night was whip the cream.  Rhubarb doesn’t seem to be in season for very long so try to make it when you see it in the produce department.  Typically that will be mid-to-late spring (April/May).

Quick Quinoa Salad

I have been looking for a new quinoa recipe and found this one in the Orange County Register.  It’s quick, healthy and makes a great side dish.

1 cup quinoa, rinsed

2 cups water

1/2 teaspoon salt

1/4 cup dried cranberries, chopped

2 celery stalks, washed and finely chopped

1/3 cup red onion, finely chopped

1/3 cup pecans, finely chopped

1 tablespoon balsamic vinegar

  • Bring quinoa, water and salt to a boil in a 2 qt. or larger pot.
  • Stir in cranberries, turn heat to low, cover pot and simmer for 15 min. or until water is absorbed.
  • Chop vegetables and nuts, and set them in a large bowl.
  • When quinoa is cooked, transfer to bowl and toss to combine.
  • Add balsamic vinegar and toss again.  Salt to taste.
  • Serve warm or chilled and don’t hesitate to add extra ingredients.  Also, you can make substitutions like almonds for pecans.

Dress up your meat or poultry with this delicious side dish.  I like to use white corn or petite white corn.  The Parmesan topping is optional so add or omit as desired.  I do not add msg.  This recipe can be can be doubled for a crowd.
