Shrimp Salad

This was served over cold wild rice and a bed of lettuce.
Shrimp Salad
2 small jars of marinated artichoke hearts
Sliced grape tomatoes
1 red pepper, julienned
1 bunch of green onions,chopped
Sliced black olives
Feta cheese
1 pound shrimp,cut into small pieces
Garlic Expressions Bottled Dressing-to taste



Simple, tasty and healthy, Bill loved it!

One Pot Clam Bake

This is the first and only clam bake recipe that I have made and it was awesome!  At home or on a houseboat, this can easily be done.  With a roll of butcher paper or newspapers spread across your table, just pour the dinner out for everyone to enjoy!  I used lobster, as called for, but they were not live 😦  and I also added shrimp to the mix.  With the sausage, potatoes, eggs and corn, even the non-seafood eaters were happy!  If there is a large seafood pot at the vacation rental, I can see this happening 4th of July week!


Serve this no-frills feast with cold beer and bowls of melted butter and steaming broth for dipping. The broth cleans the clams, particularly steamers, of any stubborn grains of sand. To serve 4, halve the recipe and divide ingredients equally between two large (8-10 quart) pots.

Changing up the chicken menu with some halibut!  I made this last night and we both really liked it along with Quinoa with Roasted Garlic, healthy and tasty!

Chili-Garlic Glazed Salmon

Sorry Eric & Steve, this recipe isn’t for you!  Easy & spicy, this salmon dish is great for a quick week night dinner or to serve for company.  Just ask our friends at a recent pool party.  The salmon was a hit!

PS  My local Sprouts was out of marmalade so I substituted apricot fruit spread.  I have prepared this recipe under the broiler and on the barbecue.

The hostess has asked you to bring an appetizer, what to make?  I had a 2 lb. bag of Costco large uncooked shrimp on hand and tried this delicious yet easy recipe.   Dad skewered and barbequed the shrimp while I made the two easy sauces.  This impressive dish received many compliments and will be a definite repeat!
