One Pot Clam Bake

This is the first and only clam bake recipe that I have made and it was awesome!  At home or on a houseboat, this can easily be done.  With a roll of butcher paper or newspapers spread across your table, just pour the dinner out for everyone to enjoy!  I used lobster, as called for, but they were not live 😦  and I also added shrimp to the mix.  With the sausage, potatoes, eggs and corn, even the non-seafood eaters were happy!  If there is a large seafood pot at the vacation rental, I can see this happening 4th of July week!

 

Serve this no-frills feast with cold beer and bowls of melted butter and steaming broth for dipping. The broth cleans the clams, particularly steamers, of any stubborn grains of sand. To serve 4, halve the recipe and divide ingredients equally between two large (8-10 quart) pots.

Quick Meat Loaf

“Quick” meatloaf might not have name appeal but this easy main course was not only quick but tasted great too!  I made it with gluten-free bread crumbs and did everything else as written.  I also made smashed red skin potatoes and broccoli as suggested.  Jack was a fan of everything, ok maybe not of the broccoli, so this dinner will happen again!

Love these healthy, simple, taco lettuce wraps.  Elle even ate a whole one that Daddy rolled up in a wheat tortilla.  Now that says something!

I love quinoa!  It is also a great leftover and can be added to salads, eggs etc.  In this recipe I used arugula instead of spinach because I had it on hand, great!

Changing up the chicken menu with some halibut!  I made this last night and we both really liked it along with Quinoa with Roasted Garlic, healthy and tasty!
