West Texas Chili

Dad is always on the hunt for a killer chili recipe and he thinks he may have found it!  Being fairly new to Texas, we aren’t certain that this is a “west” “east or “other” Texas chili recipe but what we do know is that we like it!!!  Thanks Bill for your continued recipe hunt and for leaving the corn flour out for me! 😉

Simple Spinach Dip

Just as the name says, this is really simple but also creamy and delicious.  I made it ahead of time and reheated it, which is always a bonus.  Served with tortilla chips and sliced veggies, it was quickly devoured by adults and kids alike!

Filets with spiced butter, yum!  Dad & I wanted a filet dinner for two and this new recipe rocked!  Finding the recipe on my phone while shopping was not the best way to prepare for attempting a new dish.  Subsequently, I did make some modifications but no worries, it was all good!  Dad wanted to use the sous vide so the modifications started there.  He used salt, pepper, olive oil and fresh rosemary for the beef.  After it reached the desired temp, he seared the filets in a pan and we took up the recipe from there using the pan’s  brown bits and continuing with deglazing etc.  I found a small size package of beef demi-glaze at Central Market which was convenient since it is sometimes expensive and hard to find.   As for the spiced butter and veggies I didn’t realize until I got home that there were two other recipes for those!  I didn’t have coriander seeds, cilantro or lemons!  Oh well, I had a grapefruit so used that for the citrus and minced up some fresh rosemary instead of the missing cilantro.  I actually used whole artichokes as the recipe called for with boiling salted water only, no flour etc.  When I read the reviews I saw others had used canned artichoke hearts.  Easy peasy!  Next time I’ll do that.  Even with some slight adjustments, to account for less than great planning, we loved this entire meal and will definitely make it again.  A delish Cab topped the whole evening off!!!

Hollandaise Sauce

It wouldn’t be Christmas morning without eggs Benedict.  This recipe is from Susan and has become a tradition not only for our family Christmas morning but for brunch on the annual houseboat trips as well.  Always accompany with a sparkling glass of champagne!

3 Egg Yolks (room temperature)

1 1/2 Tbsp Lemon Juice

3/4 cup Butter (melted)

1 Tbsp Hot Water

Dash Cayenne

Combine egg yolks and lemon juice in blender.  Add 1 Tbsp hot water to yolks and lemon juice.  Turn blender on high and immediately pour in hot butter in a steady stream for about 5 seconds.  Add a of pinch salt, cayenne and blend for about 30 seconds.

Chocolate Decadence Cake

 This classic chocolate cake recipe was given to me by Lizanne many years ago.  I’ve made it so many times that I should have it memorized!  Easy and can be made ahead, it’s elegant enough for even the most special of occasions!  Serve with homemade whipped cream, yum!
Chocolate Decadence Cake
12 Servings

6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
1/2 cup freshly brewed espresso coffee
1 cup (2 sticks) unsalted butter
1 tablespoon vanilla extract
6 large eggs, separated, room temperature
1 cup firmly packed dark brown sugar
1/2 cup sugar
1/3 cup sifted all purpose flour
powdered sugar

Position rack in center of oven and preheat to 350 degrees.  Butter 10-inch diameter springform and with 2 inch high sides.  Melt both chocolates with coffee and butter in heavy medium saucepan over medium-low heat, stirring until smooth.  Pour into large bowl.  Cool.  Mix in vanilla extract.

Using electric mixer, beat yolks with both sugars in medium bowl until slowly dissolving ribbon forms when beaters are lifted.  Fold yolk mixture into chocolate mixture.  Fold in flour.

Using electric mixer fitted with clean. dry beaters, beat whites in another large bowl until almost stiff.  Fold 1/4 of whites into chocolate mixture to lighten.  Gently fold in remaining whites.  Gently pour batter into prepared pan.  Bake until toothpick inserted in center comes out with moist crumbs still attached, about 45 minutes.  Transfer to rack and cool (cake will fall.)
(Can be prepared 1 day ahead.  Cover cake in pan with plastic wrap and let stand at room temperature)

Run small knife around cake pan sides to loosen if necessary.  Release pan sides from cake.  Invert cake onto plate.  Place stencil or doily atop cake.  Sift powdered sugar over.  Remove stencil from cake and serve.
